Should be capable to handle day-to day F&B department. Scheduling of staff efficiently to give impeccable service to the guests.
CORE FUNCTIONS:
1. Planning Budgeting & Forecasting.
2. F & B Policy and objectives.
3. Operational efficiency.
4. Vigilant Supervision.
5. Cost Control.
RESPONSIBILITIES:
Prepares revenue forecast for the F & B department.
Monitor attendance to organization standards. F&B policy and SOPs (Standard Operations Procedures)
Review daily cover analysis & average check analysis.
Review monthly revenue earned in the department and analyse variances and possible corrective action.
Regular interaction with the Executive Chef to discuss and work at strategy for the F & B department.
Controlling F & B costs within the guidelines set by the Management.
Make the breakage cost report for the month with reasons and corrective action.
